BOILED RICE RECIPE

Ingredients

  1. Cold Press Coconut oil
  2. Onion
  3. Salt to taste
  4. Cups of green peas
  5. Crushed white pepper
  6. Garlic powder
  7. All purpose seasoning
  8. Long grain rice
  9. Water
  10. Coconut milk
  11. Thyme
  12. Scallions

 

Preparation

  1. Heat coconut oil in a pan and add chopped onions
  2. Add crushed white pepper, garlic powder, all purpose seasoning.
  3. Stir gently and add the peas.
  4. Add a bit of salt to taste
  5. Stir and fry for 30 seconds and transfer it onto a clean plate and set aside.
  6. In the same pan, heat some more coconut oil and add chopped onions, all purpose seasoning.
  7. Followed by the coconut milk and stir.
  8. Add washed rice and stir thoroughly.
  9. Cook and stir until the water is evaporated.
  10. Season with salt.
  11. After that add some water to cook and stir.
  12. Bundle up the green scallions and fresh thyme together and place on top of the rice for a nice flavour.
  13. Cover the pot and allow to cook on low heat for 20 mins.
  14. Remove the scallion and add peas and mix well.

15. Enjoy with some fish stew.

GOAT MEAT LIGHT SOUP RECIPE

Ingredients

  1. One pound goat meat.
  2. Onions
  3. Garlic.
  4. Ginger
  5. Thyme
  6. Chili pepper
  7. Garden eggs
  8. Fresh tomatoes
  9. Bouillon cube

Preparation

  1. Boil three garden eggs, two big fresh tomatoes and ten chili peppers until tender.
  2. Wash goat meat and transfer it into a clean saucepan, big enough for the soup.
  3. Add peeled and chopped ginger, garlic, thyme to a blender .
  4. Blend until smooth.
  5. Crush bouillon cube onto the meat. Pour blended mixture into the meat. Mix well with hands and marinate for about 30 mins and set it on fire.
  6. Cook under medium heat for about 10 minutes.
  7. Add about half cup of water and cook for about 30 minutes.
  8. Blend cooked garden eggs, tomatoes and peppers until very smooth.
  9. Mix with water and strain into the cooked meat.
  10. Stir and let it cook for 45 minutes under low heat.
  11. Serve with fufu or cooked Rice.
