BOILED RICE RECIPE
Ingredients
- Cold Press Coconut oil
- Onion
- Salt to taste
- Cups of green peas
- Crushed white pepper
- Garlic powder
- All purpose seasoning
- Long grain rice
- Water
- Coconut milk
- Thyme
- Scallions
Preparation
- Heat coconut oil in a pan and add chopped onions
- Add crushed white pepper, garlic powder, all purpose seasoning.
- Stir gently and add the peas.
- Add a bit of salt to taste
- Stir and fry for 30 seconds and transfer it onto a clean plate and set aside.
- In the same pan, heat some more coconut oil and add chopped onions, all purpose seasoning.
- Followed by the coconut milk and stir.
- Add washed rice and stir thoroughly.
- Cook and stir until the water is evaporated.
- Season with salt.
- After that add some water to cook and stir.
- Bundle up the green scallions and fresh thyme together and place on top of the rice for a nice flavour.
- Cover the pot and allow to cook on low heat for 20 mins.
- Remove the scallion and add peas and mix well.

GOAT MEAT LIGHT SOUP RECIPE
Ingredients
- One pound goat meat.
- Onions
- Garlic.
- Ginger
- Thyme
- Chili pepper
- Garden eggs
- Fresh tomatoes
- Bouillon cube

Preparation
- Boil three garden eggs, two big fresh tomatoes and ten chili peppers until tender.
- Wash goat meat and transfer it into a clean saucepan, big enough for the soup.
- Add peeled and chopped ginger, garlic, thyme to a blender .
- Blend until smooth.
- Crush bouillon cube onto the meat. Pour blended mixture into the meat. Mix well with hands and marinate for about 30 mins and set it on fire.
- Cook under medium heat for about 10 minutes.
- Add about half cup of water and cook for about 30 minutes.
- Blend cooked garden eggs, tomatoes and peppers until very smooth.
- Mix with water and strain into the cooked meat.
- Stir and let it cook for 45 minutes under low heat.
- Serve with fufu or cooked Rice.
