Ingredients

  1. Black eyed beans
  2. Cooking oil
  3. Scotch bonnet or habanero chili
  4. Bouillon cube or all purpose seasoning
  5. Salt
  6. Shallot

Preparation

  1. Wash and Soak black eyed beans for 4 hours to loosen the skin.
  2. Remove the beans and transfer it in a blender.
  3. Add chopped onions.
  4. Add salt and all purpose seasoning
  5. One scotch bonnet pepper
  6. Blend until smooth
  7. Transfer the blended mixture into a clean bowl.
  8. Next use a hand mixer to whisk air into the blended mixture.
  9. This will soften and make it lighter.
  10. Chop green scallions and red Bell peppers and add.
  11. Stir altogether
  12. In a frying pan, heat enough oil on fire.
  13. With a medium sized ladle, scoop the blended mixture into the oil. One ladle each.
  14. Fry them until golden brown.
  15. Turn and fry the other side too
  16. Transfer it onto a tissue towel
  17. Enjoy with porridge.
