JOLLOF RICE RECIPE

Ingredients
  1. Two cups of long grain rice
  2. One kg of soft chicken
  3. Fresh tomatoes
  4. Tomato paste
  5. Powdered pepper
  6. Onions
  7. Spices: Thyme, rosemary, garlic,
  8. Cooking oil
Preparation
  1. Wash chicken well and place in a saucepan.
  2. Marinate the chicken with blended thyme, rosemary, garlic and onions.
  3. Add salt and bouillon cube
  4. Place it on fire. Cook under low heat for about 20 minutes.
  5. Keep the stock and fry chicken until golden brown.
  6. In a cooking pot, heat the oil used for frying the chicken.
  7. Add a little oil if it’s not enough.
  8. Add chopped onions. Fry until golden brown.
  9. Then Add tomato paste and fry for a minute.
  10. Add chopped fresh tomatoes. Stir and fry for about 5minutes
  11. Add powdered pepper.
  12. Now, add your chicken stock. Stir and let it cook for 10 minutes.
  13. Season with bouillon cube.
  14. Stir and cook for 3minutes.
  15. After that add two cups of rice and mix well with the stew.
  16. Add a cup of water and stir.
  17. Cover and cook under very low heat.
  18. Stir jollof after every two minutes to prevent the rice from burning.
  19. Cook until rice is tender.
  20. Serve with chicken or enjoy with some salad

 

SALAD RECIPE

Ingredients
  1. Lettuce
  2. Avocado
  3. Tomatoes
  4. Cucumber
  5. Leaf parsley
  6. Minced onion
  7. Vinegar
  8. Honey
  9. Salt and pepper to taste
  10. Dijon mustard
  11. Olive or cooking oil
  12. Black pepper, minced garlic
  13. Salmon steaks (thick)

Preparation
  1. Chop all vegetables
  2. In a clean plate, add a tsp of minced onion, garlic powder, crushed black pepper, and salt to taste.
  3. Followed by a tsp of Dijon mustard
  4. Add some cooking olive oil and honey
  5. Mix all together to form a perfect marinate.
  6. Clean and cut skinless salmon steaks into cute sizes and coat it with the marinate you set aside.
  7. Coat the baking pan with oil and place the marinated salmon steaks on it.
  8. Place it in the oven to cook
  9. Prepare the salad dressing by chopping the red onions
  10. Add some honey , Dijon mustard, and vinegar to the onions.
  11. Add oil, salt and black pepper to taste.
  12. Stir together and mix well, to form a perfect salad dressing.
  13. Now prep the vegetables by chopping the cucumbers to preferred sizes in a bowl
  14. Chop fresh tomatoes as well and add.
  15. Add Chopped lettuce and one whole chopped avocado
  16. Chop leaf parsley and add to the salad dressing you set aside
  17. Mix well and dress the salad with it.
  18. Mix gently with preferably two wooden spoons.
  19. Now transfer it onto a serving plate.
  20. Add grilled salmon onto the salad and add the rest of the salad dressing.
  21. Enjoy with jollof rice or fried rice
