FRIED PLANTAIN RECIPE

Ingredients

  1. Soft Ripe plantain
  2. Cooking oil or palm oil
  3. Salt to taste

Preparation

  1. Peel about 4 fingers of soft plantain gently.
  2. Slice it nicely in a bowl.
  3. Add water.
  4. Add salt to taste.
  5. Now heat oil in a pan.
  6. Add sliced soft plantain and stir.
  7. Fry until golden brown and flip the other sides.
  8. Fry until the other side is golden brown too.
  9. Place tissue towel on a plate.
  10. Transfer fried plantain on the tissue towel to drain excess oil.
  11. Serve with beans, jollof rice, etc.

FISH SAUCE RECIPE

Ingredients

  1. One large onions
  2. Ginger and garlic paste
  3. Two tablespoon tomato paste
  4. Curry powder
  5. Bouillon cube
  6. Blended fresh tomatoes
  7. Salt and pepper to taste
  8. Habanero pepper
  9. One cup cold pressed coconut oil
  10. Curry leaves
  11. Cooking oil
  12. All purpose flour
  13. Crushed black pepper
  14. Six to eight pieces of grouper steaks

Preparation

  1. Season fish with salt, crushed black pepper, curry powder, and bouillon cube.
  2. Chop one large onions
  3. In a saucepan, heat cold pressed coconut oil and add curry leaves
  4. You can substitute the curry leaves with basil or bay leaves
  5. Fry on gentle heat and add chopped onions
  6. Season with some salt and crushed black pepper
  7. Fry on gentle heat until onions turn golden brown.
  8. Add ginger and garlic paste
  9. Stir and fry for a minute
  10. Add tomato paste. Fry for about six minutes.
  11. Add curry powder
  12. Stir and add bouillon cube
  13. Add blended fresh tomatoes , stir, cover and cook for about 10mins on low heat
  14. Stir gently after 10mins and Cook for another 10 mins. Be stirring regularly to prevent stew from burning.
  15. Season the all purpose flour with some salt and crushed black pepper
  16. Coat the fish very lightly with seasoned flour.
  17. Heat cooking oil for about a minute
  18. Dust off excess flour from the fish then add them to the heated oil
  19. Fry until very crispy and golden brown .
  20. Remove the fish from the oil
  21. Now, check on the stew to see if the oil has settled on top of it.
  22. Stir and add some green chilli’s and fried fish gently
  23. Serve with rice and salad
