RICE RECIPE

Ingredients
  1. Cold Press Coconut oil
  2. Onion
  3. Salt to taste
  4. Cups of green peas
  5. Crushed white pepper
  6. Garlic powder
  7. All purpose seasoning
  8. Long grain rice
  9. Water
  10. Coconut milk
  11. Thyme
  12. Scallions

Preparation

  1. Heat coconut oil in a pan and add chopped onions
  2. Add crushed white pepper, garlic powder, all purpose seasoning.
  3. Stir gently and add the peas.
  4. Add a bit of salt to taste
  5. Stir and fry for 30 seconds and transfer it onto a clean plate and set aside.
  6. In the same pan, heat some more coconut oil and add chopped onions, all purpose seasoning.
  7. Followed by the coconut milk and stir.
  8. Add washed rice and stir thoroughly.
  9. Cook and stir until the water is evaporated.
  10. Season with salt.
  11. After that add some water to cook and stir.
  12. Bundle up the green scallions and fresh thyme together and place on top of the rice for a nice flavour.
  13. Cover the pot and allow to cook on low heat for 20 mins.
  14. Remove the scallion and add peas and mix well.

15. Enjoy with some fish stew or any sauce of your choice.

EGG SAUCE RECIPE

Ingredients.

  1. 8 big fresh tomatoes
  2. One green bell pepper
  3. Onions
  4. Bouillon cube
  5. Powdered pepper
  6. Garlic
  7. Thyme
  8. Rosemary
  9. Ginger
  10. Eggs
  11. Cooking oil.

Preparation

  1. Slice all 8 fresh tomatoes and set aside.
  2. Slice one large onion and set aside.
  3. Then Slice the green bell pepper and set aside too.
  4. Blend together ginger, thyme, rosemary, garlic and half onion.
  5. Set blended spices aside.
  6. Heat oil in a saucepan and add sliced onions.
  7. Fry until golden brown.
  8. Add blended spices, stir and fry for about two minutes.
  9. Add sliced fresh tomatoes, stir and let it cook under low heat for about 5 minutes.
  10. Then add powdered pepper. Stir again and add one bouillon cube.
  11. Stir and let it cook for one minute.
  12. In a clean bowl, crack about five eggs.
  13. Pour it in the stew and lower the heat.
  14. Don’t stir yet. Let it cook for two minutes then stir.
  15. Add sliced green bell pepper and cook for a minute.
  16. Serve with rice, yam,etc
