RICE RECIPE
Ingredients
- Cold Press Coconut oil
- Onion
- Salt to taste
- Cups of green peas
- Crushed white pepper
- Garlic powder
- All purpose seasoning
- Long grain rice
- Water
- Coconut milk
- Thyme
- Scallions

Preparation
- Heat coconut oil in a pan and add chopped onions
- Add crushed white pepper, garlic powder, all purpose seasoning.
- Stir gently and add the peas.
- Add a bit of salt to taste
- Stir and fry for 30 seconds and transfer it onto a clean plate and set aside.
- In the same pan, heat some more coconut oil and add chopped onions, all purpose seasoning.
- Followed by the coconut milk and stir.
- Add washed rice and stir thoroughly.
- Cook and stir until the water is evaporated.
- Season with salt.
- After that add some water to cook and stir.
- Bundle up the green scallions and fresh thyme together and place on top of the rice for a nice flavour.
- Cover the pot and allow to cook on low heat for 20 mins.
- Remove the scallion and add peas and mix well.
15. Enjoy with some fish stew or any sauce of your choice.
EGG SAUCE RECIPE
Ingredients.
- 8 big fresh tomatoes
- One green bell pepper
- Onions
- Bouillon cube
- Powdered pepper
- Garlic
- Thyme
- Rosemary
- Ginger
- Eggs
- Cooking oil.
Preparation
- Slice all 8 fresh tomatoes and set aside.
- Slice one large onion and set aside.
- Then Slice the green bell pepper and set aside too.
- Blend together ginger, thyme, rosemary, garlic and half onion.
- Set blended spices aside.
- Heat oil in a saucepan and add sliced onions.
- Fry until golden brown.
- Add blended spices, stir and fry for about two minutes.
- Add sliced fresh tomatoes, stir and let it cook under low heat for about 5 minutes.
- Then add powdered pepper. Stir again and add one bouillon cube.
- Stir and let it cook for one minute.
- In a clean bowl, crack about five eggs.
- Pour it in the stew and lower the heat.
- Don’t stir yet. Let it cook for two minutes then stir.
- Add sliced green bell pepper and cook for a minute.
- Serve with rice, yam,etc
