Ingredients

  1. Okro
  2. Aidan fruit also known as prekese
  3. Water
  4. Bouillon cube
  5. Crushed black pepper
  6. Tomato paste
  7. Smoked fish
  8. Four African snails
  9. Salted fish, locally known as supaku
  10. Bone in beef, lamb or tolo beef,
  11. Selim
  12. Salt to taste
  13. 2 large onions
  14. 2 garden eggs
  15. 3 fresh tomatoes
  16. Garlic
  17. Chilli
  18. Ginger.

Preparation

  1. Put to a boil some fresh tomatoes, peeled ginger, garlic, chilli peppers, half an onion and garden eggs.
  2. Cover the lid to cook faster
  3. In a separate pan add washed tolo beef
  4. Chop half onions into smaller pieces and add to the beef.
  5. Add oxtail and season with salt and cook on medium heat
  6. Add two grains of Selim for flavour
  7. After the meat has browned add tomato paste and stir.
  8. Add some crushed black pepper and some bouillon cube.
  9. Fry continuously for two mins
  10. Blend the boiled vegetables till smooth
  11. Add the rest of the protein to the soup pan. That is, smoked fish, salted fish, and snails
  12. Pour blended vegetables to the meat and add more water if required.
  13. Cook on medium heat for about 30 mins.
  14. Roast Aidan fruit for a minute and break it into two and throw it in the soup and continue boiling on medium heat
  15. Add whole egg plants( divided into two, whole okro, and some chillis.
  16. Taste for salt.
  17. Cook a little more until eggplant and okro are tender.
  18. Serve with fufu, rice, eba, banku and kenkey. It can be taken on its own too.
