Ingredients
- Green scallions
- Red Bell pepper
- Minced chives
- About 8 eggs or more
- Curry powder
- All purpose seasoning
- Butter
- Chili pepper
- Water
- Salt to taste.
- Crushed black pepper

Preparation
- Chop vegetables
- Crack all eggs into a big bowl
- Whisk all together
- Mix salt and crushed black pepper with two tbsp of water
- Pour it in the eggs and set aside.
- Now in a big pan, chop Thai chili, onions, bell pepper, chives, shallot onions and add 3tbsp of butter and all purpose seasoning.
- Add curry powder and put the pan on fire and cook till translucent
- Stir well
- Let it cool down and transfer it into the eggs and whisk
- Heat butter in the frying pan
- Fry the eggs in bits, adding some sliced onions and red Bell peppers.
- Serve and enjoy with braised rice or Coconut rice.
